Eat, Drink & Be Merry: Baby Arugula and Avocado Quasedilla

  • 2 Flour Tortilla
  • 1 Cup grated cheese, sharp Cheddar or Mexican blend
  • 1 Cup of Arugula
  • ½ Cup of Avocado Slices
  • 1 Tbsp of Parsley
  1. Heat up your skillet to medium heat
  2. Lay your first tortilla on the heated skillet
  3. Sprinkle ½ cup of cheese
  4. Add the Arugula, Avocado Slices, and Parsley
  5. Top off with the remaining ½ of cheese
  6. Add the second tortilla
  7. Cook for 3-5 minutes, then using a spatula flip the tortilla to the other side
  8. Cook for another 4-5 minutes
  9. Cut up in 4 equal parts
  10. Serve hot or at room temperature
