1 cup old-fashioned oats1/2 cup crispy rice cereal2 Tbsp packed brown sugar1/2 tsp cinnamon1/4 tsp ground ginger1/8 tsp salt (generous)1/4 cup honey1 Tbsp coconut oil1/2 cup dried fruit
Preheat oven to 300 degrees. In a large bowl, mix together the first 6 ingredients. In a saucepan, gently heat up the honey and oil over medium-low heat until smooth and combined. Pour this mixture over the dry ingredients and stir. Spread onto a lined baking sheet and bake for about 12 minutes or until golden brown.Enjoy over soy yogurt, with almond milk and fruit, a topping on ice cream, or just with a spoon!
