Recipe

  • 2 1/2 cups uncooked penne pasta
  • 1 jar spaghetti sauce
  • 1 cup mozzarella cheese
  • 1/4 cup neufchatel cheese
  • 2 tbsp parmesan cheese
  • 9 oz spinach 
  • 3 chicken breasts

Directions

Preheat oven to 375.  Cook chicken breasts on medium-high heat for about 3 minutes, add in sauce and continue to cook for another 3 minutes, or until cooked through.  Add in neufchatel cheese and let simmer for 5 more minutes.  Cook pasta according to package, adding in spinach for the last minute.  Drain pasta and spinach, add back to pot, stir in chicken mixture, mozzarella cheese, and parmesan cheese.  Spread into a 2qt casserole. Cover with foil and bake for 20 minutes.
