  • 5 strips medium-thick bacon (full-flavored smokey bacon is lovely), cooked and crumbled
  • 3 medium-large avocados, cubed
  • 1/2 medium white onion, chopped into 1/4 inch pieces
  • 2-3 canned chipotle chilis en adobo, removed from canning sauce, stemmed, deseeded, and chopped (we are really crazy and added them without deseeding--hooooooha that was spicy!)
  • 1 medium-large round, ripe tomato, cored and chopped
  • 1/4 cup fresh cilantro, (loosely packed) coarsely chopped
  • 1-2 T fresh lime juice
  • Salt and pepper to taste
  • 1 bag corn chips to gobble up your guac with!

  • Method
    Cut your avocados in half, remove the pits, and cube with a paring knife; then scoop out into a bowl with a spoon. Mash the avocado into a coarse puree and then add the onion, chipotle chilis, cilantro (save some to garnish if you'd like), and about 2/3rds of the bacon. Gently stir to combine, add lime juice, and season with salt and pepper to taste. Cover with plastic wrap directly on surface of guac and refrigerate until serving time. When served, sprinkle extra bacon (and cilantro if you have it) on top and tuck in!
