Ingredients:

  • 1-3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup canola oil
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 or 3 mashed ripe bananas
  • 3/4 cup semisweet chocolate chips

Directions:

  1. Preheat oven to 350F.
  2. Combine 1-3/4 cups flour, 3/4 cup white sugar, 1 tsp baking powder, 1 tsp baking soda and 1/2 tsp of salt in a bowl.
  3. In a second bowl, whisk together the egg, 1/2 cup yogurt, 1/2 cup oil and 1/2 tsp vanilla.
  4. Crush your bananas in a third bowl.
  5. Mix the dry ingredients into the wet ingredients until moistened.
  6. Mix in the 3/4 cup of chocolate chips and crushed bananas.
  7. Fill up the muffin tin with the batter. This recipe will make about 16 or so muffins.
  8. Bake at 350F for 22 to 25 minutes. Use a toothpick to test.
  9. Cool on a rack for 5 minutes.
