Ingredients:

  • 2 boxes of Au Gratin Potatoes (or scalloped, cheesy, whatever kind you have)
  • 2 split chicken breast, cooked and shredded
  • 1- 16 oz can of petite diced tomatoes
  • 1 cup real bacon bits
  • 1 cup of shredded sharp cheddar
  • Salt and pepper to taste

Directions:

  • Cook potatoes according to directions on box. (If you have the chicken boiling, you can use the boiling water from the pot in place of the boiling water in the instructions)
  • Remove potatoes from oven about 10 minutes before the listed cooking time.
  • Add desired amount of salt and pepper.
  • Drain juice from tomatoes.
  • Add the tomatoes and shredded chicken and mix well into the potatoes.
  • Spread the mixture evenly through the dish again.
  • Then top with bacon bits and shredded cheese.
  • Stick back into the oven until the cheese is bubbly and slightly browned (approximately 10-15 minutes).
  • Let sit 5 minutes before serving.
