KID TESTED MOTHER APPROVED "EAT YOUR VEGGIE'S" PASTA

Getting my kids to eat veggie's is always a challenge which is why I was thrilled when my kids ate every bite of their food and never mentioned the vegatables.

This recipe is really simple and tastes great, I will definately make it again!  I hope you like it.

INGREDIENTS

4 TBLS Olive Oil

4 Cloves of garlic chopped finely

1/2 C Bread Crumbs

1 lb Rotini Pasta

1 C Reserved Pasta Water

1 1/2 C Shredded sharp cheddar or swiss cheese

3 Zucchini sliced thin

4 Ears of corn (cut corn off cobb)

DIRECTIONS

In a small frying pan, saute half the garlic for about 30 seconds, add bread crumbs and remove from heat.

Once pasta is cooked, drain (remember to reserve 1 cup of the pasta water).  Add 2 tablespoons of olive oil and the remainder of the garlic.  Cook for about 30 seconds and then add zucchini and saute for about 5 minutes until zucchini is tender crisp.  Add corn, reserved pasta water, pasta and 1 cup of shredded cheese.  Salt and pepper to taste and stir mixture until completely mixed.

Add 1/2 cup of shredded cheese to the bread crumb mixture and stir. 

Serve pasta, top with some of the bread crumb mixture and enjoy!

NOTE: Subsitute or add any of your favorite veggies to this recipe, it works just as well!
